Building good value through cheesemaking

Rather than relying solely on milk sales, Matthew Fraser-Jones has built a cheesery alongside the dairy at Stonehouse Cheese Estate near Stanford. He spoke to Henning Naudé about managing a Jersey herd and an artisanal cheese operation, creating a business model that extracts greater value from every litre of milk while reducing waste across the farming system.
